Autumn Harvest Soup - adapted

This recipe is based on Autumn Harvest Soup from Fitness magazine, with a few modifications.

"beef" Tacos

This is my fiancee's secret recipe for tofu-tacos, made with Morningstar Farms Grillers Crumbles instead of meat.

The cheese & avocado are optional if you want to cut calories even more!

Stuffed Bell Peppers

Yummy stuffed bell peppers - one is great for dinner (with a side of extra veggies or bread if you need more food).

Antioxidant Power Sorbet/Smoothie (Vita-mix)

This makes an awesome sorbet using a Vita Mix, or can be made into a smoothie by adding additional liquid (water or OJ).

Tofu Stir Fry

Stir fry, lots of veggies, yummy and healthy

Boiled Tofu Soup

This is my first attempt to mimic the amazing boiled tofu soup at Tofu House in San Diego. The flavors aren't quite right, but it was still yummy and filling.

Dangerously Delicious Oatmeal Cookies

These are amazingly good oatmeal cookies. Replacing the chocolate chips with dried fruit would make them healthier, and eliminating the walnuts would decrease the fat content, but I calculated it for how I made them.

Orange Sauce for Poultry

This is a very yummy orange-flavored sauce for cornish game hens or other poultry. It also makes broccoli taste great!

Requires Vita Mix or other high-powered blender.

Using my Vita Mix for breakfast - amazingly filling and good!

Pasta w/ Zucchini, Broccoli, and Tomatoes

A very veggie-rich pasta dish - either 4 side-servings or 2 main dish servings. Most of the fat is the good kind from olive oil.

Single serving Chicken Stir Fry
