Low calorie but filling vegan breakfast from "Skinny Bitch Ultimate Everyday Cookbook" by Kim Barnouin. Made a few alterations, please see tips for more information.
Light and cool salad with few ingredients. Will try 1 red and 1 yellow tomato in the future
Use your favorite bell peppers, I typically use red and yellow. These freeze well, I just wrap each in wax paper and toss in a freezer bag. To reheat, either wrap in foil and warm for 1hr at 350F (preferred) or microwave for 2 minutes turning halfway through.
Feel good about serving this low-calorie low-fat meal. Not only is it low in saturated fat, but the cheese provides calcium and the broccoli is a good source of vitamin C. As a bonus, the broccoli teams up with the spaghetti sauce to provide vitamin A and the multi-grain pasta is a good source of fiber. Carb Choices: 3-1/2
