This is a great recipe for the South Beach diet, in any phase. For Phase One, you can replace the sour cream by increasing the cottage cheese to 1/2.
"I came up with this recipe when I made a chicken cordon bleu recipe for the rest of my family. I used to love the Tyler Florence chicken cordon bleu recipe, but as a vegetarian, that's out of my diet. This is a delicious alternative to the traditional chicken cordon bleu, using Gardein Chick'n Scallopini and LightLife vegetarian ham slices."
Use this as a base recipe. It's great by itself, and is fool-proof to make, but you can dress it up more with fresh onions, peppers, garlic,etc. Use it as a salsa, a salad topper, a filling for wraps, or a topping on sandwiches. Enjoy!
