Chickpea Pasta is the Bomb! Made entirely of chickpeas and lentils. Full of fibre and protein. Yum!
If you can have dairy, then use heavy cream instead of the coconut milk.
These are not very sweet. You will want to top with a sugar free glaze of some kind.
Have one for a side dish or take two (and a add a green salad) for a meal.
7 grams net carbs per slice.
If wheat and soy doesn't cause issues for you, then this is a good one.
You can use any combination of nuts and/or seeds that you wish as long as the total comes up to 2 1/2 cups.
This recipe can be made in about 2 minutes. Great lunch. Serve with crackers or a slice of sprouted grain bread. Or in my case, some Paleo bread.
I was really missing my wraps, but found a GREAT product! Coconut wraps!!! Made of coconut meat, coconut water and Himilayan salt. They are raw, gluten and dairy free. And, OH! Did I mention how YUMMY they are? They come in original flavour and curry flavour.
Just tossed a bunch of stuff into my pan and I came up with this dish. Definitely will make this again! It's sweet and spicy!!!
It seems to me that the possibilities of nut butters and nut meals are endless here. You could also top with a drizzle of dark chocolate and then sprinkle some chopped nuts on top.
The lovely thing about this recipe is all the variations you can do. Feel free to exchange the nuts, seeds, fats, fruits & grains for whatever you like. Just use the same volume. Cup for cup...
Adapted from a recipe I saw in a magazine. I have gone two steps further to make it even healthier. Combining dry curd with regular cottage cheese cuts the sodium down quite a bit too.

Make this in a small cassarole dish. Like a brownie pan. This recipe does not make a large pan of lasagna.

I changed the original recipe from 15 squares to 9 squares and I also mixed the coconut INTO the brownies rather than sprinkling on top after baking.

This recipe is for a soft serve icecream maker... Although you could make in any icecream maker, but it does get pretty hard after it is frozen. You may need to thaw slightly before scooping.
For my 6 year old... No Yucky Raisins, No Yucky Nuts!
This makes a LARGE batch. I freeze them and put into lunches.
OK. It's still pasta and it's still Italian, but switching up a couple of ingredients, like no salt added tomato sauce and using half and half ricotta and low fat cottage cheeses...

Next time I make these I would OMIT the cumin and use garlic instead. The cumin isn't very KID FRIENDLY! LOL!

Like a spinach lasagna, except rolled into a fresh cottage cheese dough and baked. Smothered in tomato sauce and parmesan and baked until browned and bubbly...
Just enough for ME! I like mine topped with peach slices and just a drizzle of maple syrup. YUM!

Adapted from Oxygen Magazine. Also, I buy precooked, chopped spinach that is frozen in small 20 gram cubes in d stored in a resealable bag. It's really convenient when you don't need a whole package of frozen spinach.

You will want to prepare this dish several hours in advance...
If you don't have Marcy's Gourmet stuffing, just use croutons or homemade croutons made from whole wheat or whole grain bread. Or, stale cubed bread.
Marcy's has some seasoning which is similar to that already in the recipe.. (thyme, mustard...) but it also has some dried cranberries and orange zest. So, if you use your own bread or croutons, you may want to add a small handful of dried cranberries.
This cheesecake even has a chocolate press-in pie crust. You can omit to save on the calories...
This recipe uses yogurt cheese and low fat cottage cheese.
I used some banana for sweetness, and used less sugar than a standard cheesecake.
Of course, you will probably make more than one. I like this recipe because if you want one, you can make one and pop it into the toaster oven. If you want to make a batch, then just multiply the recipe.

This recipe has been adapted slightly. The array of different flours required to make POWER FLOUR are a little difficult to find at your local grocer, so I used a few of the flours mentioned in the POWER FLOUR recipe.
Can substitute any kind of fruit for the blueberries. Apples & cinnamon would be good, also! YUM!
Each large cake can easily serve two people...
One for lunch or two for dinner. Add some raw veggies and there you go!
I buy frozen chopped spinach, that comes loose in a resealable bag. HANDY!

These "meat" balls make great meatball subs, or on top of pasta or rice. However, they don't HOLD together IN a soup or stew very well.
I would like to try this recipe with ground poultry or bison. This dish is protein and carb combined, so just add some veggies. I like with herbed, diced tomatoes on top with some steamed or roasted asparagus (see recipe in cookbook) on the side. YUM!

I adapted this recipe, making it my own. All the ingredients are clean, except for the sweetened craisins. (I had to use them up somehow!)
I baked this in a conventional oven. But, you can try in a toaster oven or even a microwave.
BIG bowl of Soup! Just add a slice of bread or some crackers and you got your self a meal!
Use low sodium or no salt added broth and canned tomatoes to lower the sodium...
Healthy fruit and oats, with a wonderful cream cheese filling. Great for breakfast!
