Pepperoni Lovers' Pita Pizza

My nutritionist and I sat down and came up with this substitution for pizza to satisfy my pizza ADDICTION, lol. It's actually really good! I'm not a big cheese eater, so I use it veeery sparingly, which saves tons on fat. Fast and easy!!!

Sweet Potato Chips with Honey Yogurt Ginger Dip

taken from Clean Living Magazine. Yuuuummmyyyy!!! Such a better alternative to chips and dip, or cookies!

HEALTHY Mexican Casserole

My best friend and I used to make this ALL the time when we first started college. Easy, quick, and really good!! I used 96% lean beef for less fat and calories, but there was no option for that, so if you use the leaner beef then you'll come out a little better. Also if you use the 2% cheese, then you'll come out better on fat too. I just don't like the taste of it with the dish.

Power Chili

Comes from Alli, with a few changes. VERY good and low fat, low calories. Easy to make when you don't have much time!!

Crawfish (or Crayfish) Enchiladas

This came from Cooking Light magazine, but I left out some ingredients and changed others a little. I didn't care too much for all that garlic, so unless you really like garlic, you might want to go easy on it. It can be overpowering. I don't like sour cream so I left that out. I included it in the ingredients for everyone else, though, so that way you still know what the fat/calorie content is. It saved a little bit of fat and calories for me.

Healthy Mexican Lasagna

Use ground turkey instead of beef and save TONS of fat and calories.

Spicy Oven Fried Chicken

If you like fried chicken but don't like the fat! Kind of like a shake and bake chicken dish, but sooo much better. It takes a while to marinate, so make sure you've got plenty of time to do it, or prep it in advance!

Penni's Beef Stew

I don't like southern-style stews b/c I don't like the roux, but I LOVE this one! It's low in fat and calories, and high in protein and GOOD carbs! And it lasts a long time!
