Easy Chinese version
Shredded beef sandwich meat made overnight in the slow cooker
I made this up and it is so so good!
Make the beef in the crockpot overnight and assemble the enchiladas to freeze the next day.

This is so good. You can add nuts or dried fruit for variety
This healthy version of green rice becomes very creamy in the crock pot. No one can guess you've used brown rice.

These can be made in batches and frozen. I use Santa Fe Tortilla Company whole grain tortillas from Sams which have 100 calories ea.

I only had a full sugar pudding and a sugar free so this is the result of that combo when made into a pie with 2 boxes of pudding mix in it (and no cool whip).
I think you could make this with 1 C applesauce and no oil and get good results
Each fajita has 144 calories with no cheese or 162 calories with 1/2 cheese. The recipe says 8 Azteca tortillas but there are 2 tortillas in a serving on these so the nutritional information is calculated with 16.

Can leave out cranberries or put in other fruit. Incredible muffin!
I think this makes about 8 1 1/2 C servings. Each one is 184 calories. You can add salt to taste. Calories would be less if 93% lean ground beef was used.
This makes 4 6 oz servings so the calories are a bit higher.
2 C equal 1 serving I make this from leftover pot roast ingredients
This fills a 7 quart crockpot full. You can easily halve it for a smaller group. Servings are about a cup and a half if tomato juice is added. See tip.

versatile and low calorie
These are really good!!! These are really easy once you've got some cooked chicken.
Pie with a twist, a creamy white layer, Makes 6 generous servings per pie. My family adores this recipe. If you don't want 2 pies, cut everything in half, or freeze the second.
I made the baked version of these great vegies with steak on Christmas day. They are wonderful and versatile. Can be grilled or baked and use any combo of vegies desired. If made without potatos and with 6 C total of carrots, cauliflower and broccoli florets and red pepper, the calorie count is only 90 per serving.
