Thai Coconut Curry Shrimp (From Cooking Light)

Red curry paste conveys plenty of spicy heat, so a little goes a long way. Feel free to add a bit more to increase the heat, or omit the paste to tame the dish. The addition of slightly sweet coconut milk smooths out the flavors.

Quick Barbecue Chicken from Cooking Light

Rub Chicken breasts under the skin with the spice paste and grill for a simple, delicious late summer dinner. Leave the skin on the chicken as it cooks so the breasts will remain juicy, and discard skin just before serving.

Kung Pao Shrimp from Cooking Light

For a spicier kick to the pungent glaze, leave the seeds in the chiles. Chinese black vinegar (we used balsamic as a substitute) will add a smoky taste.
