I recently fell in love with McDonald's Maple & Fruit Oatmeal. This is my home version...which I've made vegan by using almond milk. My version also has less calories, less fat, less sodium, less carbs, less cholesterol, more protein, more fiber AND tastes super fantastic.

This southern classic can easily be turned into a Vegetarian meal by omitting the turkey sausage and using vegetable broth. You can also use water in place of the broth to lower the sodium content. For you meat lovers, you can subsitute a different type of protein as you wish.

This recipe was an idea that came to me after having a mexican pie at my friend Ashly's house. She used a pie crust and layered it with most of the same ingredients listed here. It was delicious!!! For some reason though I wanted a different type of crust. My love for sweet corn tomalito came into mind....and I got to work....creating the perfect crust for this easy mexican pie.
The spice comes from a jalapeno, so feel free to leave that out and this broth would no longer be spicy.
The key to having a clear (instead of cloudy) broth is to not allow the broth to come to a boil. It should slowly come up to a simmer, but NEVER a rolling boil...and...in order to have that beautiful golden colored broth you must leave that yellow onion whole and do not peel the paper-like skin.
Enjoy in soups or any recipe that calls for broth. It freezes nicely too.
NOTE: I would assume this actually has zero calories considering that you are not consuming the actual vegetables.
