Roasted Potatoes in Olive Oil

This is a great addition to a chicken or beef main entree. You can add or substitue any other seasonings you prefer for this recipe - in the past, I've added minced garlic and chili powder. I've also substitued Adobo seasoning or Emeril's essence for the salt and pepper.
