This is a banana version of the popular lowfat, low sugar muffin recipe. These muffins are moist and delicious. They are simple to make and also freeze well. Pop 2 frozen muffins in the microwave for 1 minute and you have a nutritious, portable breakfast.

Sweet Garden Salsa w/ Splenda (Bulk)

This recipe is easy enough to make a batch every day when the garden is coming in. It is a bit sweet so it is great on beans and peas!

This is my attempt to make a healthier, but still tasty, version of Chicken Divan. The sodium count is still a little higher than I would like, mainly due to the jarred Alfredo Sauce. The count could be lowered by using a homemade Alfredo Sauce but then the calorie count would probably be higher.

Oven Fried Buttermilk Chicken

Soaking the chicken in buttermilk makes it very moist.

15 Bean Soup with Sausage

Low in fat, good source of fiber. Sodium is a bit high due to the sausage. Good on a cold rainy night. The soup gets better every time you warm it up.

This potato salad is a reduced-calorie version of a Southern Living recipe. It is delicious served warm or room termperature. The blue cheese flavor is stronger when it is served cold.
