I use either white or yellow corn meal - had to come up with a dairy/wheat/egg free food once I found out that I suffered from these allergies. This corn bread is very good and my kids love it even though they do not have allergies. I have adjusted the amount of gluten free flour so if you want to make this recipe with wheat flour use 1-1/4. The texture may be a little different for you without egg but I love it. So if you want egg add 2 egg whites. But remember any modifications to the recipe need modifications to the Nutritional information!
