Tuna Salad with Spinach and other veggies to add vitamins and to be extra filling. Uses the Olive Oil Mayo. You can add a little splenda if you like it sweet. Serving ideas include: stuffing 2 large tomatoes, sandwiches, using it as a dip with reduced fat wheat thins, etc.
Italian Chicken with Peppers and Onions. This is the quick version, but it is much better with fresh red, yellow and green peppers and onions and even mushrooms. This is a great way to add extra veggies to a meal.
