I had left over Spag. Squash and wanted a cold side dish. Since I am to stay away from green leafy veggies (on blood thinners)- this really hit the spot.
I hate to throw away food. I freeze any leftover veggies- cooked or raw, until I have 1- 2 quart containers full. Then I make a veggie soup. The amounts in this recipe are approximate- you can add more or less- depending on what kind of veggies like. I do not add pasta or potato to the soup. I also add fresh veggies that I have on hand.
