Greek influenced chicken pita pocket.
This recipe came from the comments of an Epicurious receipe of the same name, but less delicious taste. You can use rice or orzo. I sometimes add diced/shredded cooked chicken to make it a meal. The calories from chicken are not accounted for in the calculations.
Not exactly "healthy" but extremely satisfying. This is just something I threw together when I got home late from the gym and needed to create a meal. I used a blend of seasonings I thought would be good - dried basil, oregano, black pepper, garlic powder, crushed red pepper, and cayenne (I was in the mood for something spicy) but you could use whatever seasonings you'd like.
To make healthier -
If you used 93% fat free turkey, it should reduce the fat/calorie content some. 85/15 was all I had on hand. You could also eliminate the cheese since the dry alfredo mix makes the sauce creamy but I was extra good at the gym, had calories to spare for the day and went for it. In a perfect world, I would have had zucchini, bell peppers, or other veggies to add but again - home late from gym so I just served with a heaping piled of herbed string beans.
Adapted from a restaurant recipe. Serves 2 with rice as a complete meal, or 3 to 4 as part of a larger meal.
Slightly spicy breakfast sausage. Use less pepper if you don't want as spicy a taste. Best if you mix all ingredients and let sit, refrigerated, overnight. From Recipezaar.

Eat as a side dish or with a serving of tortilla chips as a hearty dip.
Best when still warm from the oven with a slight crust - yum! I keep 6 in an airtight container for the current week and freeze 6 for the next week. Perfect mid-morning snack. I'll also try modifying this recipe to replace the oil with applesauce.
I modified this recipe from Food Network to include lean ground turkey, cut out the refried beans, and add more spice! The recipe is calculated for 8 12 oz. servings with chicken broth. You could certainly make smaller servings if you're interested in reducing calories.
Soba noodles tossed with a spicy sesame peanut sauce. Served chilled or at room temperature. VERY decadent, so a once in a while treat.
I found this recipe on another website but modified just a tad. Serve with salsa or light sour cream or light ranch dressing. Condiments are not included in the nutritional calculations.
Can be used with or without meat in burritos or on nachos. For a meat alternative, partner with spanish rice and veggies in a burrito. Or, use morningstar vegie crumbles with it.
