Last night my mom had mercy on me and cooked hamburgers and hot dogs for everyone because I had a pounding headache. When I realized that she had bought some Granny Smith apples, not even knowing about my crafty little plan to whip this recipe up, I figured it was a sign, so I defrosted the giant pack of pork chops I had in the back of the freezer and went to work.
Tonight I went a little ethnic and made a Latin favorite, but I have to admit, though I am half Latina, this was my first time making Spanish Chicken and Rice.
Ever freak out at 3pm wondering what you were going to make for dinner? Betcha never considered that a crockpot meal could bail you out of that mess, huh? This one only takes 2 - 2 1/2 hours to cook, and it takes simple ingredients even I happened to have in my pantry and fridge already. Problem solved!
This one can be spiced up with some Asian seasoning for the parents while the kids keep the simple version.
I'm not really sure why it's Italian Style, lol, but I heavily modded this from a recipe in 'The One-Dish Bible.' One dish, under 30 minutes to prepare and cook, the kids will eat it, and it's protein-heavy. Score!
