Recipes I've Shared:
Modified from Barefoot Contessa. Rich and savory. Serve with crusty french bread to sop up the juice.
The Minimalist (Mark Bittman) recently posted this easy, fresh recipe on the NYTimes.
(You may notice there are shrimp in the photo. The first time I made this, I added a half pound of shrimp as I put in the cabbage ... delicious! But the recipe/nutritional facts don't include shrimp or any other protein but the egg.)
Incredibly light and fluffy whipped potatoes, with a tang of buttermilk.
My friend Kate's simple, delicious recipe. I was a little scared by the idea of kale at first (it sounded like seaweed to me) but it is so buttery and crispy in this recipe, a perfect flavor and texture combo with the eggs. A fantastic way to get in a vegetable at breakfast!
(Other versions on here are lighter ... I prefer mine decadent, with real butter and sugar!)
Lighter twist on a delicious holiday recipe... great way to get in a serving of fruit!
I used to dip artichokes in butter, but this guiltless dip is so creamy and delicious, I'll never go back!
A great evening snack -- since artichoke takes a while to eat, I like to munch on this while I watch a movie.
Lengthy cook-time, totally unhealthy. . . but absolutely delicious. . .
Probably the worst possible food for a diet if you eat too much . . . but small servings can be a delicious side-dish that aren't too overwhelmingly bad for you . . .
Delicious, wholesome, filling -- an easy, hearty meal! Can be made with vegetable broth substituted for vegetarians.
