I just threw together some chicken, grapes, sweet onions, walnuts and a touch of mayo. It turned out delicious!
Boil chicken until cooked thoroughly. Cube or shred to bite sized pieces. Combine all ingredients. Lightly grease bottom of pan with broth from chicken. Add a layer of fritos then the chicken/enchilada/mushroom soup mix, add 1 C of cheese followed by another layer of Fritos. Top with remaining cheese. Cover with foil at bake at 350 for 25-30 minutes.
