Zucchini Chocolate Chip Cookies

Yet another use for the abundance of zucchini we seem to have every summer. These soft, slightly spicy chocolate chip cookies are nice treat.

Carrot Zucchini Muffins

The original recipes calls these cupcakes. By substituting whole wheat flour, and applesauce for a portion of the white flour and oil, I made them healthier. I also used Splenda instead of sugar. I eliminated the cream cheese icing originally called for and decided to serve these as muffins! My kids love these, even requesting them for birthdays. For special occasions I go back to all white flour and add the icing! Otherwise--they make a great breakfast muffin or snack!

5 Minute Ice Cream

I modified this recipe to use skim milk instead of cream. I also substituted Splenda for sugar. This is a great healthy sweet treat that even my kids enjoy. This is more like an "ice milk." For a more traditional ice cream-use heavy cream (you'll be adding fat, of course!) You can also change the frozen fruit to get a variety of flavors.

Shepherd's Pie

We love this hearty "comfort" food on cold winter days. By using ground turkey and cutting back on fatty margarine, this home style meal is healthier than a traditional shepherd's pie. It is easy to substitute fresh or canned corn. Also experiment with a variety of potatoes (we like red potatoes or yellow for a change from traditional white potatoes)
