Chocolate Peanut Butter Smoothie (NO banana!!)

Rich, creamy, smooth and delicious. Keeps you going all morning long!! Of note, this smoothie NEEDS to chill in the fridge to allow the oats and the chia seeds to thicken it up.

I make it the night before and store in a mason jar in the fridge until morning.

Publix Apron Pistachio Crusted Salmon

Original recipie also includes 1 cup of fresh cherries and fresh chopped mint - neither of which were available the first time I made this and we loved it without them. :)

Quinoa Gratin

This is an adaptation of a recipe from Stephanie Gallagher. I originally made it butternut squash and it was wonderful. Don't happen to have squash right now so making without.
