Makhlouta - Lebanese Lentils with Dried Beans and Rice

This traditional Lebanese dish is often served during Lent by Lebanese Christians. The consistency is similar to chili, however it may be thinned according to personal taste. I have updated the recipe, significantly reducing the amount of oil and substituting brown for white rice, to make it even more Spark friendly.

Armenian Spearmint Squash Stew

This hearty Armenian soup will warm you up on a cold winter's night! Try either zucchini or my personal favorite, butternut squash, for added variation. People who think they don't like lamb love it in this dish. Stew beef makes a fine substitute.

Armenian Lentil Kuftes

This popular Armenian dish is traditionally served during Lent, when animal products are abstained from. Though a bit high in fat from the olive oil, these patties make a healthier and satisfying alternative to hamburgers. Put a couple in a pita half and garnish with parsley, chopped bell pepper and chopped scallions for a real treat!
