Costco -like Plain Cheesecake

"This recipe is simple, but good." (I found this recipe at

Costco tops their cheesecake with deep red strawberries(canned or mostly chunky/slightly runny) and whipped cream around the edge. It looks impressive.

Lindsay Messina's Three Bean Salad (, March 2009)

Oxygen: What's your favorite clean-meal recipe?
Messina: I have a lot of favorites, but one is my three bean salad. I just love beans! I mix chickpeas, large red kidney beans and black beans with cherry tomatoes, cucumbers, red onions and fresh basil, then toss with balsamic vinegar and extra virgin olive oil. I can eat that meal every day!

A comfort snack from way back, these crumbly squares really hit the spot when enjoyed with a glass of skim milk.

Date squares are sometimes referred to as matrimonial squares because the smooth filling and rough topping is said to contrast the easy and difficult times of marriage. We’ve added figs to the filling and replaced the usual butter and brown sugar in the topping with maple flakes and apple butter for a moist and delicious comfort treat!

The rich and spicy flavors of Moroccan cuisine are the perfect way to warm up on those chilly winter nights! High in protein and flavor, these tasty meatballs make a great appetizer or entrée. You can even turn them into shish kabobs with small bamboo skewers. Don’t feel discouraged by the lengthy ingredients list – because Moroccan cooking is based on fragrant spices, many of the ingredients are repeated in both the sauce and the meatballs.

Mom's Super Easy & Versatile Home Made Chili

This is Mom's original recipe but other adaptations can be easily made (such as turning this into Hawaiian hash or into a vegetarian chili).

You can definitely add more vegetables or beans to this if you wish, which will make this go even further. You can add oregano and basil (about 2 tbsp or to taste) if you wish, but I did not include this in the recipe. Sometimes I like to add jalapeños or hot sauce to my own serving.

Excellent for lunch! This meal keeps you full and highly energized (especially if you make it a complete meal by adding a side salad and possibly a very small whole wheat roll)!!! If you are serving this for others, you can put a very small amount of shredded mozzarella cheese on top to make it look really glamorous. Enjoy!
