This almost one pot dish I made from stuff I had in my cabinets and freezer. I had no idea what was happening on the way in, but it sure was delicious. I was craving Turkey Tetrazzini and this hit the spot. Please note, these measurements are approximate as I was just throwing stuff into a pot to see what would happen.
If you love peanut butter ice cream and milkshakes, you'll love this. Great for breakfast. You'll totally feel like you are cheating, but you aren't.
Quick, easy and nutritious for cooking in a rice cooker. Prepare most of it in the am. Set the timer and go to work. Come home. Microwave veggies and enjoy. You can add seasonings like cumin, hot sauce, salt and pepper to taste. I kept it on the bland side as I was pureeing the leftovers for baby food.
Quick and easy stir fry.
Adapted from a Pampered Chef Recipe. Very filling for the number of calories. Quick and easy and under 30 minutes.
Fresh from the Farmer's Market... Garlic Scapes...
Yummy breakfast bar alternative. Adapted from Deceptively Delicious Cookbook. I added rolled oats and flax seed. I reduced the amount of sugar and increased bananas.
For the mom on the go... A box of whole grain mac and cheese, some turkey dogs and frozen veggies make a quick, one-pot, fun meal for the kids.
