Homemade Frozen Pizza

Healthier and cheaper than buying "health" food frozen pizza at your grocery. Take a weekend afternoon to make it up, and you’ll end up with six frozen emergency (translation:  "I gotta have pizza, NOW!") meals for later!  :)

Don't be scared off by the lengthy prep time - most of it is waiting for the dough to rise...

Definitely too many calories for everyday fare, but a good vegetarian alternative to meat dishes on holidays - my mother-in-law used to make this for me every Thanksgiving since I married into the family almost 30 years ago, and now that she's allowing me to help cook the meal, it's become my job. A full serving is alomost 300 calories, but the omnivores in my family like it so much that they have it as a side dish (smaller portions, so fewer calories) - you'll definitely want to make enough for both vegetarians and omnivores - I'm the only vegetarian in the family, and I restrict myself to one serving, but this recipe always somehow disappears!

Millet-Okra cakes

I love okra fry bread, but my body didn't appreciate all the oil used to prepare it! So I came up with this healthier alternative... I like having these as a side with soup.

Crockpot Southwestern Bean Soup with Cornmeal Dumplings

The original to this recipe was printed in the February, 2009 edition of "Living the Country Life" - I just upped the veggie and whole grain content. I find that it makes a dinner all by itself. A 3 1/2 to 4 quart crockpot is recommended. Don't let the cooking time scare you, it basically sits in the crockpot and cooks itself! :)
