I serve this with a recipe I found in Cooking Light called Mushroom and Zucchini Orzo.
Because I don't tell my family I put anchovies in the base of this sauce, they have no idea. You can't taste the anchovies at all...but I've made the sauce without it, and it just isn't as robust.
This is one of my favorite dishes to make because it has tons of protein and tons of veggies...and even my kids will eat it because I cut all the veggies up and put them in 1 cup bowls seperately so they can pick what they want in their packet.
This is my 7 year olds favorite salad...the addition of pasta nuggets and chickpeas makes it kid-friendly

By using low sodium stock or broth, it cuts way down on the fat. The little bit of EVOO really makes a difference in the taste. This recipe takes me 15 minutes to make and I store it in an air tight container and use it as a veggie dip throughout the week! FANTASTIC!
