Be sure to cook/simmer on a low to medium flame to help preserve the vitamin and mineral content (an alternative would be to bake it on 300 degress would probably be best for about 60 minutes). I actuall save and freeze all left over vegetables so when I need to make a vegetable stock/broth, I have something handy and very tasty with less calories than the cans or boxes. Otherwise veggie stock/broth can be substituted.

If using canned, it will be 45 minutes.
If making your own broth/stock, you will need to do that first before adding the actual veggies you want to eat.

To make it a gluten free meal, omit the sausage and replace with a gluten free variety.

Seafood Salad

This can be a one-dish meal as it has low calorie meat (Protein), 100% whole wheat pasta (grains) and diced veggies (complex carbs). Feel free to use fat free mayo to even lessen the fat and calories.

Lavash Pizza

This is a light way to have pizza without all the fat.

Zero Points Salad

This is a zero points (Weight Watchers) salad you can enjoy. Add 1/4 cup fresh fruit and 2 tablespoons navy beans and make it a 1 point salad.

Pollo Sanremo (Bertucci's)

Grilled chicken breasts cooked in a light lemon sauce with roasted black olives, thyme and capers. Served with asparagus
