My family has always loved chicken pot pie but not the calories, carbs, or fats so I came up with this lightened version. My family LOVES it!
Found this recipe online - just like my Mom used to make! And it all cooks in one skillet. :o)
I am regularly asked to make up a pot of my chili for family & friends. I make it mild for those who don't like spicy and bring a bottle of Tobassco sauce for those who do.
A low fat version of a creamy carrot soup with ginger and curry added for spice.
Great to bake and freeze then microwave desired quantity for a quick & easy breakfast on the go.

Based on a recipe taught to me by my Mom, I've reduced the fat down to where it is neglible. Great over steamed cauliflower or broccoli!
