Porotos con Mazamorra

This is a wonderful typical Chilean dish. In Chile beans are called "porotos" and they use the cranberry beans fresh bought from the local farmers market. You can also add a cup of butternut squash, It will enrich the texture and it tastes great. Never omit the basil, as this contains the flavor that makes this dish so unique and wonderful.

Quinoa Stuffed Zucchini

This is a wonderful dish to prepare in summertime, when you get to pick the biggest zucchinis from your local farmers market. You need big ones to be able to stuff and bake them without them falling apart. You can also vary and use rice instead of quinoa.
