d=1134076, this meatloaf has offered a good solution to the dilemma in our household: my husband LOVES meatloaf, and I've always hated it. This slightly smoky/spicy moist meatloaf still has texture, which was always my meatloaf complaint, and GREAT flavor! He even said it was "outstanding with a little zip" in sandwich form.

Chicken Spinach Meatballs

After using my food processor to "grind" some chicken breasts I got on sale, I was very excited to be able to try my hand at some chicken meatballs! My husband said at first glance these appear dry, but definitely do NOT taste dry!

I suppose you could use frozen spinach in this recipe, but we didn't have any on hand, so I just used some fresh spinach finely chopped.
