This hearty soup is low in calories, low fat and high in fiber.
This can be used as a marinade for Chicken, Fish or Shrimp. It is also good for stir frying these foods and vegetables.
Yield: Approximately 1 3/4 cups
Makes approximately (14) 2 tbsp Servings
This marinade has a mild flavor but if you find it too tangy, add 1-2 tbsp water to the mixture or replace Cider Vinegar with Apple Juice.
I put together this recipe on a day when I hadn't been able to get to the grocery store because of the snow storms. So, the only fresh ingredients I had left were an onion and some garlic. It actually turned out pretty tasty. So if you are snowed in with mainly canned goods, give it a try.
This is a fast and tasty way to prepare spinach.
If you want to reduce the fat, you can use only 2 tsp of olive oil, however, this is a good way to get MUFAs.
The vinegar adds a tang, which helps enhance the flavor so you won't miss the salt so much.
