A twist on classic chicken & wild rice soup.
We had a bunch of leftover smoked chicken quarters that we didn't want to throw out or freeze, so we made a soup!
Consisting of mostly egg whites and a few egg yokes for balance, this high protein and low calorie easy breakfast is a great start to the day. I like to make up a big batch (about 24 muffin tins worth) on Sundays to get me through the next few weeks. They freeze great.
Perfect over Jasmine rice!
Mini turkey and veggie meatloaf cups - perfect with a side of rice and more veggies.
I make this at least once a week. It's super easy to make in my toaster oven, but a regular oven can be used. It's a good way to quell the pizza craving, and get in my veggies! If you don't have Joseph's brand pita, Flat Out brand works just as well.
Made with fat free half and half and fresh cauliflower, roasted bell peppers and onion.
Veg-all, ground beef, and barley soup make this soup quick and easy.T his makes a HUGE batch, you will need to freeze some.
