This is a favorite of mine that I found in the Eating For Life Cookbook. I absolutely love this recipe because it doesn't taste like it would be healthy, but it is. Hint: flank steak is a tough piece of meat because it is so lean, the longer you marinate the more tender your meat will be, so try to marinate it overnight.

Herbed Mashed Potatoes

In this version of mashed potatoes, we bake first rather than boil - perfect when you're already using the oven for an accompanying roast. Baking the potatoes before mashing also yields a somewhat airier, fluffier texture.

Mushroom Lover's Chicken

This is a gerat, quick after work receipe, it really can be done in a half hour! If you can't find, don't like, or are simply looking to save money you can substitue the shitake and other wild mushrooms, with cremini, portebella or any other mushrooms you like. Also, if your looking at budget constraints you can substitue parmesean cheese for the gruyere! Enjoy!

Love this dish for its short cooking time. Just add a green salad or seasonal vegetable and the meal is complete. Included are some variations to keep the recipe interesting in case you find yourself making it over and over again.

Notes: The heat from the hot pasta partly cooks the eggs. If you are concerned about eating raw or undercooked eggs, use 1/2 cup pasteurized eggs in lieu of fresh.

Roasted Red Pepper-Tomato Soup

Guests can sip this festive, zesty soup from small cups or glasses. Notes: Pimentón de La Vera is a Spanish paprika that adds a smoky, sweet intensity, but Hungarian or regular paprika work too. Prep and Cook Time: 30 minutes.

Whole Wheat Pizza Dough

This dough makes enough for two pizzas, so you can freeze half the dough for another day. If you freeze it, thaw it in the refrigerator overnight, or on the counter for 1 1/2 hours. Unlike other bread dough, pizza dough needs to rise only once. After rising, simply punch it down, then let it rest for 15 minutes before rolling or stretching to the desired shape. If you like, you can let the dough rise in a floured zip-close freezer bag in the refrigerator overnight. You'll find it easiest to roll out or stretch dough when its room temperature.
