Quinoa with Feta, Parmesan, Spinach, and Mushrooms

I made this last night and had to stop myself from eating more. The chunks of unmelted feta cheese give the dish a gooey burst of flavor while the quinoa helps contribute to the more than 10 grams of protein per serving!

3 Minute Egg McMuffin with Turkey and Cheese

This is a delicious alternative to the traditional McMuffin. Way better than the original.

Spaghetti Sauce with Diced Tomatoes and Ground Turkey

I make this sauce at least once a week. The baby spinach adds lots of extra nutrients and is a great lo-cal way to bulk up the sauce.

Goes well over whole wheat pasta or spaghetti topped with a bit of grated cheese. Add a side salad and you have a delicious balanced meal.

This dish is a family staple in my house. It's delicious, quick, and oh so easy to make.

It's also easy to adapt and change according to your preferences.

20 Minute Skillet "Lasagna"

This is an awesome easy vegetarian alternative to a typical ground-meat lasagna. It's made with whole wheat pasta instead of traditional lasagna so it's really easy and quick to make.

English Muffin Pizza

This serves as a great base for a variety of pizzas. You can top with loads of veggies, mushrooms, even chicken for some extra protein. Just grill up your toppings in a small pan while preparing the rest of the pizza. Minced garlic, slightly browned in a pan is a delicious alternative to the garlic powder in the recipe.

I used Fiber One Multi-Grain English Muffins in my calculation as they are delicious while containing 8 grams of fiber and 5 grams of protein per muffin.

A delicious, moist alternative to your standard ground beef meatloaf. This recipe can also be used to make meatballs.

The recipe makes enough for 16 servings in 8 mini loaves. I make all 8 mini loaves at once but only cook 4, freezing the rest for an easy meal later.
