My vision of the Wendy's Salad Version Grilled, done in the Oven instead. This way it can be used in Wraps, Sandwiches, or as a Dip without the Cracker Topping!

Absoloutely beats the old Tuna melts! In a 'pinch' I've used regular tuna (well drained) & added liquid smoke to it to get the same taste & results!

This was something the DH fell in love with on last shopping trip- turned out to be an expensive way to make my homeade Encilada Casserole! So I revised it for a lower Carb Diet.
My version for use on Vegetables, etc. You can of course use regular of low fat Milk instead of the Cream, this was an only thing on hand situation that really worked!

** Note, I wasn't too pleased with the entire appearance and consistency of this Version I've given. My recommendation and trial later will be to chop the Apples instead and add them to the Mixed Batter and cook this as an Original Pancake Batter in a Non-Stick Pan.

this is meant to be served with all the ingredients layered vey prettily in a serving bow. We just like to 'gently' mix it up without the lettuce, or on a bed of lettuce at serving time & eat up!

this can be reduced 'carbed' by using Spaghetti Squash instead of pasta. It actually tastes better that way! and its a great way to use any left over spaghetti for quick meal.

Tturkey burgers, served on toasted pita bread or whole wheat and dressed with marinara sauce, are reminiscent of a sausage pizza. Shredded mozzarella combined with fresh basil melts beautifully inside these gems.
Great alternative to the usual 'greasy' Rotiserri Chicken! Can use on Whole or Chicken strips.
Cool & refreshing salad- not too high in Carbs. Plus get your fruits snuck in to menu!

Using "Missions Low-Carb or La Tortilla Factory" Corn or White tortillas & Carb Hood Dairy-makes it low-carb without lossing flavor. Also, freezes & re-heats well.
*I make Meat Loaf with this recipe so I can freeze the left-overs for emergencies.
You can add (1) egg & (1c.) crushed pork rinds or cracklins if your not worried about the fat.
I kid U NOT- I'd seen these on Lyon in the Kitchen, and EatingWell.com had the recipe. Maybe I'll figure a healthy alternative, I'll update with pic's soon.
