A friend passed this recipe along to me last holiday season, and I was super impressed! These pancakes would be great for Christmas morning or any wintertime breakfast.
This is a great basic vegan muffin recipe to which you can add any extras you want. Make this recipe all your own by adding 1/2 cup of whatever you fancy. (Of course, it won't be counted in the nutritional info.)
Fresh or frozen berries are great, as are dried fruits or chocolate chips.
Baking instead of frying breaded eggplant slices gives all of the crispy goodness without adding fat! Serve this over a little pasta for a complete meal. (My meat-eating husband loves this!)
