I adapted my Harvest Vegetable & Casserole to fit the South Beach Diet Phase 1 guidelines. Also I try to eat "clean" so substitute homemade/grown ingredients whenever I can. This can also be cooked in a slow cooker.
Chop and store mushrooms and onions in advance to cut down on prep time in the morning. Adding Turmeric will add colour to egg whites.
