Best Flax Bread

Easy, microwaveable, and tasty low carb bread or bun. 0.15 cup of cheese is about 2-3 T, and any cheese may be used -- I've used Cheddar, Mozzarella, Jack, and Swiss. For a bun, I add half again of each ingredient and put half the batter into each of 2 containers. (That's 3 T flax, 3 T butter, 3-4 T cheese, 3/4 t baking powder, and 1 large or 2 small eggs.)

For those who can't or don't want to eat pasta, but love Italian spaghetti sauce.

Chicken and Sausage Casserole - Low Carb

This is a tasty, low carb, grain-free casserole. It's good for a Paleo diet if cheeses are acceptable. The cream cheese makes a creamy sauce thats more healthy than overly processed canned creamed soups.

Sausage Casserole - Low Carb, Grain free

This was originally titled Sausage Noodle Casserole, and was in the Memphis Commercial Appeal around 1970. It's not exactly a diet dish, no matter what diet you're on, but it's so tasty and has been one of my family's favorites all these years. I keep trying to "fix" it so I can eat it on a low carb diet.

The original recipe is as below except replace the squash with 3 cups cooked noodles. Also, the topping in the original was 2 Tbsp butter and 1 cup Corn Chex (or 1/2 cup bread crumbs), along with the garlic salt and paprika. Here's what I do these days.

Low Carb Egg, Bacon, & Sausage Muffins

Cook breakfast ahead and have a lie-in! This recipe is easy to substitute your favorite veggies and meats. (Spinach would be yummy!) It would also do well in the jumbo muffin pans for larger muffins; just cook them longer.

Flax Muffin in a Minute

No grains, no gluten, low carb, these are quick to fix in the microwave. They are rich in protein and fiber for a great breakfast! This is perfect for the Paleo diet.

"White Bread" Rounds

No grains, no gluten, almost no carbs, but tasty! Add any spices or flavorings you like. I bake these in a muffin top pan. I don't consider myself a cook, so the instructions are detailed so I don't forget anything.

Flax Sandwich Buns (Gluten Free, Low Carb, Grain Free, & Salt Free)

Same recipe as KRAVMAGAGIRL's, but doubled and without salt. These are tasty and healthy. They are thin but easy to split.

Cinnamon Blueberry Flax Muffins

This is really Chelsie's Cinnamon Cranberry Flax Muffins from, but I don't like cranberries. The original recipe also added 1/2 tsp salt and used 4 large eggs instead of 5 medium ones.

Low-Carb Hamburger Buns

No flour, no gluten, only 1.4 grams of carbs! Recipe is from Instructions are for muffin-top pans, but they can be baked in regular muffin tins. Blueberries can be added with double the sweetener to make dessert muffins.
