Greek Quinoa Salad

This dish is excellent hot or cold! You can use a rotisserie chicken for this recipe or use leftover chicken from another meal. Just make sure the seasonings don't interfere with the dressing. Unseasoned chicken is best for this. Chicken may also be omitted to make a great vegetarian recipe!

Veggie Tacos- mushroom and black beans

These are SO tasty and a great alternative to beef! I topped mine with diced avocado and shredded cabbage and it was phenomenal!

Beef Macaroni Soup

I made this recipe straight out of a book and it's more like a goulash than a soup, but it's very tasty! You can lighten it up by using turkey instead of beef and enhance the pasta experience by using whole wheat pasta!

Easy Squash Dinner

I make this often because my 1-year old loves it. Because I'm feeding it to such a wee one, I don't add a lot of seasoning while cooking, so many of you may find this too bland. Personally, I like to use a bit of spray butter, salt and cayenne pepper on mine! You can season it however you would like. This is a very versatile dish!

Turkey Soup 2

This is similar to my other turkey burger soup, but tastes completely different. It's just as simple to make though!

White Fish with Chickpea Ragu

This is also a great way to use leftover fish!

These are super delicious and about 100 calories per cookie, which means you CAN have that little indulgence!


This amazing cheesecake fooled all my friends and family! I served it to them but didn't tell them that it was low fat and sugar free! I asked them to guess what made this cheesecake different. My mother-in-law guessed I used ricotta cheese! They were amazed to learn the ingredients I used. They all raved about the taste! It takes a while to make this cheesecake, but it's worth it! Try it out on your family and see if they even miss the sugar!
