Potato Leek Soup

This is a yummy creamy soup - which is so satisfying.

I used olive oil instead of the butter the recipe called for and 1/2 cup lowfat milk and 1/2 cup of whole milk instead of the cream and yogurt originally called for. You can probably use all lowfat milk.

Vegetarians - just add veggie broth!
