Kotta Pilafi (Chicken)

A dish my Greek grandmother served.

Family goulash

This hearty goulash and a crisp salad of greens are a winning menu for a chilly evening

Feta Stuffed Chicken Breasts

Preheat oven to 425. Spray baing pan with non-stick spray.

With fork, mix together feta, sun dryed tomaotes (finely chopped), basil, salt, pepper in small bowl util blended.

Spread panko on sheet of waxed paper.

With small sharp knife, cutpocket approx 2.5 inches in each chicken breast. Put 1/5 of mixture in each breast.. Press edges closed.

Brush top of each breat with mayo. Press coated side of chicken one breast at a time into panko. Place coated side up inn prepared pan.

Lightly spray bread cumbs with non stick spray.

Bake until chicken is cooked through and crust isgolden about 25 minutes

Tuna noodle casserole

A quick and easy receipe. Peas or green beans can also be added for color.

Quick Chicken Chasseur

A quick and tasty dinner. You can substitute caned mushrooms for fresh, low sodium chicken broth for regular and brown rice instead of white. It all works. But the calories wil be lower. I add more or the tarragon and thyme.
