Scallops In "Creamy" Wine Sauce

A good one that tastes "fancy" but isn't. Easy one for first time scallop users - just remember, sear them, set them aside and no more than 5 more minutes!

Oolong Latte, Iced

Cool and refreshing, served over ice in a pretty glass. Works best if you boil water and brew the tea in the evening and chill overnight.

Lentil "Beef" Taco Filling

All vegetarian and low sodium if you use low-so tomato sauce & bullion. Toss it all in the slow cooker and dinner is ready when you get home! Use as "meat" for tacos, burritos, taco salads or even on top of brown rice (none of which are included in the nutrition info).

Serving size is approximately 3 oz or 85g

Quiche For One

Quick and easy! Sometimes I sub a veggie sausage pattie for the bacon. Great for breakfast, lunch or dinner with cantaloupe.
