Recipes I've Shared:

Simple chicken soup

This is a ready-in-short-time recipe to which you can add multiple other ingredients -- or great just how it is with perhaps a dash of hot sauce

Laurie's Chicken Pasta Soup

Great, filling, low-cal soup for rainy days

Blueberry muffins

These muffins are made with stone ground flour from Butte Creek Mills in Eagle Falls, Oregon.

Appleberry oatmeal

This is a great nutritious breakfast, easy to prepare and available all year round. Recipe calls for blueberries, but raspberries, blackberries, or strawberries could be substituted with minor shift in calories.

Laurie's Chili

I first made this recipe to dehydrate for our backpacking trip. In that instance, I made sure the ground beef was very lean and crumbled into small bits, I mashed the black beans before adding them and minced the celery so it would dehydrate well and rehydrate successfully in camp.

Rhubarb rolls

It is vital to make these rolls in the steps indicated. If, for instance, you mix the sugar into the rhubarb before you need it, it will make syrup instead of staying relatively dry for the filling. Goes very well with whipped cream or ice cream.

Blueberry Honey Yogurt Tart (Danielle)

This is a terrific fruit tart using fresh blueberries -- but could use other fresh fruit.

Laura's Clafouti

This is the type of dessert that begs for improvisation so, by all means, use your favorite seasonal fruits or dried fruits that have been plumped with water, juice, or spirits.

Macaroni and cheese

Comfort food from my childhood

Biscotti, almond

This is my own simple take on a favorite, twice-baked cookie. I give them to friends for Christmas, and they seem to be pretty welcome. They are not, however, low calorie by any means, so should be consumed with constraint.
