Beet Berry Pineapple Smoothie

This is a great snack smoothie. It has enough protein that you can drink it before a workout or just to tide you over between meals. Plus beet juice has a lot of powerful nutrients that help your ticker! If it is too much for you add a healthy sweetener like stevia or even honey.

My Bulgarian Friend's Pasta

In college, my roommate who was from Bulgaria and I concocted this 'recipe' and it is total comfort food. Of course, back then it was with real bacon and real changes have been made to make it slightly healthier. Serve with a salad or some steamed veggies and voila!

Also, if you have time or have homemade tortellini or ravioli on hand this is perfect for that as well.

This recipe comes from Taste of Home magazine. Very good on a fall day, especially with a couple dashes hot sauce or a can of chiles added in.

Shrimp & Pea Pesto Pasta

This pasta serves many and if you really want to save calories just omit the pine nuts and the grated parmesan. It is a very hearty dish that gets requested a lot! I serve it with a nice big garden salad.

Copycat No Pudge Brownies

This idea comes from a copycat recipe of No Pudge Brownies on RecipeZaar, but it has been changed a bit. If you want something that satisfies a chocolate craving and won't make you feel guilty - this is it. I like a dollop of fat free cool whip on top and I'm in heaven.

Paula Deen's Sausage & Rice Casserole (Lightened Up)

The original is from her Lady & Son's cookbook. I changed up a few items to lighten it up and it's a big hit! By omitting all the butter and replacing the pork sausage with turkey, you are saving loads of calories and fat! Enjoy!
