White Wine-Glazed Chicken thighs

This chicken recipe uses just a little bit of "naughty" ingredients like butter to make an entree that's very easy to cook and tastes much more decadent than it actually is! That might seem like a lot of garlic, but it mellows a lot in the pan. It's true chicken thighs are a bit higher in fat than chicken breasts, so feel free to substitute. However, chicken thighs are a more economical choice (about half the price of breasts where I'm from), and what they lose in calorie content they make up for in taste and vitamin content.

Tex Mex Chicken Salad

A meal in a bowl! This is a great lunch or supper on hot days, and it fills you right up for less than 300 calories. For suppers on the go, you can freeze the chicken strips in advance and just heat them up in the microwave. Low in sodium, high in protein.

Low-cal Hummus

Mediterranean dip -- There are a few recipes for it on Spark, but this one's mine. Using yogurt allows you to cut down on the amount of oil and tahini used without sacrificing creaminess or taste, so it's lower cal and lower fat than a lot of versions.

It freezes incredibly well -- I divide it up into baggies and take them out in the morning for lunch.

Vegan Chocolate Cake

Very easy cake free of butter, milk, and eggs! Make sure your sugar is vegan, too, if you're making it for a strict vegan. Refined cane sugar isn't!

Kofta Curry (meatball)

A warm and filling curry that's easy to make and freezes well. Traditionally, it's made with ground lamb, but using extra lean ground beef cuts the calories by a third. Best served with rice, but great on its own, too!
