Curried Tofu Salad

The recipe suggests you blanch the tofu first, but I don't see the point of that so I'm omitting it from the recipe. If you want to blanch the tofu, it suggests doing it for 3 minutes. Aside from using plain yogurt instead of mayo as mentioned above, I added in extra seeds and extra curry powder. To make this vegan substitute soy yogurt or try nayonnaise.

Grilled Tofu

Mild-flavored tofu benefits from this intensely flavored lemon juice-and-garlic-based marinade. If you have the time, marinate the tofu early in the day (up to 8 hours before serving) so it can absorb all the flavors.

Raw Asparagus Soup

This could be called the king of soups. The fiber in the asparagus creates a delightful texture, and the tahini gives it a smooth quality. Do not use the woody ends of the asparagus. Chop only the most tender part, about 1 1/2"-2" from the end.
