Nutritious, delicious breakfast bars which are great for breakfast on the run or a quick snack. They'll last for up to a week in an air-tight container
This recipe asks for tinned pumpkin but as we can't get that in the UK, I make my own pumpkin puree and use 7fl oz (or 212g)
Nice and moist and freezes well for putting in packed lunches
Please note this recipe uses self raising flour - if you can't get self raising flour use plain or all purpose and add 1tsp baking powder.
Lovely gingerbread with candied ginger pieces. Serves 12.
This is an old recipe handed down through my family. The nutrition information is for 50 biscuits but I can often make more, or less, it depends on the size and shape of the cutters. Please note that the prep time of 20 minutes does not include the 1-4 hours it takes for the dough to cool to a workable temperature.
Please note that I have put the prep time as 20 minutes but it does require standing time of 4-12 hours.
This is an old teabread recipe passed down to me from my mum. It cuts better if you leave it overnight before eating.
These are a great alternative for mince pies at Christmas (or any time of year). Please note that they are NOT a low calorie substitute.
BEWARE: These are very sinful, not low in calories (157 per cookie) and very moreish. They are quite rich in chocolate flavour and are a great sweet treat, if you can stop at one. Please note that these contain coconut.
A very basic quick and easy sweet and sour chicken recipe. Serve with rice or noodles.
I sometimes use different veg, depending on what is in the house. It is also good using pork instead of chicken.
This is a very basic recipe. Please note I weigh all of the ingredients for the batter.
This is a basic recipe for beefburgers which was passed down from my grandma via my mum. You can add herbs and spices to make them different.
My Grandma used to make this and it has passed down through the family with each of us adding our own little bits. You can substitute the potatoes for pasta if you want to use the mince for bolognaise.
I loved these as a kid. My mum used to put them in our bags for mid-morning snack at school to keep us going till lunch. Great for after school too.
