I got some tips from other Spark posters on how to microwave eggs. Now I have a healthy & delicious breakfast to replace the Egg McMuffins I used to have for breakfast. I usually have this with fresh fruit or yogurt.
I found this in Rachel Ray's magazine and lightened it up. You could lighten it even more by using chicken breasts, but I like the moistness of the thighs.
