I make this Italian dinner with a salad made from mixed greens, artichoke hearts, bell peppers, and balsamic vinaigarette. Its a keeper because its healthy, delicious, easy, and the whole family loved it!
I actually like this omlette best as part of a weekend brunch. It's not only satisfying and tasty, but has a lot of your daily veggie content!!
