While the pizza is great, the topping can also be used as a pasta sauce, or just about any way you like it. You can have a pizza one night, and use the other half for pasta later in the week. This is exactly the same, only without the pizza crust and cheese.

This is a slight variation (to make it DFI friendly) on a recipe I got out of Simple and Delicious Magazine (by Taste of Home); the November/December 2008 edition.
I took bits and pieces of other chicken casserole recipes and put this DFI friendly version together. You can replace the crackers with any tolerated Ritz-type cracker.
While not exactly "diet food," this ice cream recipe is lower calorie than regular ice cream, and, best of all, those of us with DFI can enjoy it!
