Fiesta Soup

Easy, tasty soup that is very basic and easy to customize. All seasonings are to taste, so make it as spicy and flavorful as you want! I usually use more cilantro than I put, but that's because I can't get enough of it. Makes 6 servings.

Chicken Salad with Cranberries and Walnuts

This may not be the lowest in calories, but it does include fruit and nuts. Serve it in a lettuce wrap and you have a low cal, well balanced entree.

Tex Mex Quinoa

Another good dish that uses quinoa. You can vary this to make it as spicy or mild as you want. I use ground cumin and red pepper flakes in addition to the ingredients listed.
