A recipe I put together for a healthy lunch alternative. This is at home on a bed of raw spinach as a salad as it is served hot from the microwave.

My favorite egg salad recipe
This one gets its name from all the pretty colors from the mountain of vegetables added. If you've tried my Asian Stuffed Peppers, you'll find this one is very similar, but uses ground turkey instead, and everything is chopped up to fit in one bowl. This recipe makes 16 cups, but could easily be cut in half for a smaller batch.
This was originally a Publix recipe that I altered just a bit by adding more vegetables and using Dreamfield pasta instead of regular pasta. Dreamfield pasta, if you aren't familiar with it, is very diabetic friendly, with a low glycemic value. Pasta was something that had all but been cut out of our lives, both of us being diabetics, but no more. Total cooking and prep time, about 30 minutes if you chop the veggies yourself (instead of buying them already prepared).
With only 252 calories a serving, and less than 2 grams of fat, 12 grams of fiber, and high in protein, this is the perfect fill-me-up soup for lunch or dinner.
This delicious dish is a super healthy alternative to high-carb spaghetti. You can substitute ground beef, or veggie crumbles, or just leave the meat out altogether for an even healthier, low cal dish.
Some of us can't eat or don't like lettuce - so here's a tasty, healthy salad to fill up your lunch plate - and it's quick and simple, too. You can substitute any vegetables you don't like - or add some that you do!
This one is a bit high in fat because of the salt pork (substitutions can be made), but this recipe has been the same for more than 100 years. It's very filling and full of vegetables.
